'Scrumptious' Chocolate Squares
Ingredients
Base & Topping
Half a cup of soft
margarine.
about 240grams of brown sugar.
One average sized egg.
One teaspoon of natural vanilla extract.
One and a quarter cups of general purpose flower.
one and a half cups of pure rolled oats.
Just half a teaspoon of baking powder.
Half a teaspoon of salt.
Creamy Filling
two thirds of a cup of sweetened condensed milk.
one cup of our favorite chocolate chips (semi sweet if preferred).
two tablespoons of margarine (hard variety).
One teaspoon of natural vanilla extract.
just a quarter teaspoon of salt.
How's it Done? You ready?
Base & Topping
Whisk the soft margarine and brown sugar until it's nice and soft and fluffy (and keep your fingers out!)
Now whisk in your 'one' egg and vanilla extract.
In your favorite mixing bowl, combine the flour, oats, baking powder and salt.
Add the flour mixture to the creamed mix with a spoon and finish mixing together with hands (yes hands) until it all looks
consistently crumbly.
Set aside approximately one third of the mixture, to be used later.
Press remaining two thirds of the mix into a greased, lined square pan.
Filling
Place all the filling ingredients in a bowl and warm over a container of boiling water until the
chocolate chips are just about melted. Pour the mixture over the base, trying not to touch the sides of the pan. Sprinkle the reserved mixture on top; note that it won't cover it all.
Bake at about 350F for twenty to twenty five minutes until the oatmeal mixture is 'light golden' in color.
Spread the delicious chocolaty mixture over the base.
Allow to cool, cut into squares and serve it up!!!
